A Childhood Favourite


To end 2013, I decided to bake a childhood favourite and my choice of a classic treat is the marble cake. There are many variations of marble cake recipes online and in the cook books but I wanted a simple recipe of the classic vanilla and chocolate cake. I felt like baking a marble cake after tasting the delicious marble cake from one of the oldest coffee shop (a.k.a kopitiam) in town, Yut Kee Restaurant.They say, never leave Yut Kee without trying their famous marble cake. I had one such opportunity without having to suffer the lunch time crowd and the traffic congestion in KL when one of the partners (very thoughtful of him) brought some to work one afternoon. The little things  people do can unknowingly inspire others.


These are what you will need to bake a simple and delicious marble cake.

Ingredients:-
  • 250 g butter
  • 200 g sugar
  • 4 eggs
  • 250 g self-raising flour
  • 1 tsp baking powder
For chocolate batter:
  • 1 tbsp cocoa powder
  • 3 tbsp hot water
Method:-
1. Whisk the butter and sugar on low-medium speed.
2. Add in the eggs one at a time.
3. Mix the flour and baking powder then fold in both into the batter. Pour the batter into a square cake pan and leave about 1/4 portion of the white batter to make the chocolate batter.



4. Add the 1/4 portion of the batter to the cocoa powder mixture. Stir well.
 


5. Line strips of chocolate batter onto the white batter.

6. Use a chopstick to create swirls on the cake.
 

7. Bake for about 30 minutes in 175 degrees celcius.

Enjoy with your afternoon tea.
