Strawberry Almond Tart

There is something comforting about having these strawberry almond tart. It's light and the sweet and sour taste from the strawberries goes really well with the toasted almond flakes. These are perfect if you want a little bit of indulgence without feeling guilty.


The tart is filled with cream cheese and strawberry coulis and the base is made of crushed graham crackers. Sprinkle some chia seeds in the crushed graham crackers for some added fiber. Enjoy it for dessert after dinner or make a bunch to share them at a party.

Makes 8 tarts
Ingredients :-
For base
  • 30 plain crackers, crushed
  • 2 tbsp caster sugar
  • 50g butter, melted
  • chia seeds (optional)
For filling
  • 250g cream cheese
  • 50g caster sugar
  • 8 large strawberries
  • 4 tbsp caster sugar
  • cornflour
For topping
  • sliced strawberries
  • apricot glaze 
1.   Mix the crushed crackers and sugar in a bowl. Cool the melted butter to room temperature and pour in the butter into the cracker mixture. Sprinkle some chia seeds. Spoon 1 tablespoon of the mixture into individual tart cases and pat it down.

2.   Bake the base at 150 degrees for 10 minutes.

3.   To make the strawberry coulis, puree the strawberries and put them in a saucepan. Add the sugar and cornflour to the puree and cook  until thick. Cool the strawberry coulis to room temperature.

4.   Prepare the cream cheese filling by mixing the cream cheese and the sugar with an electric mixer. Whisk until sugar dissolves.

5.   Spoon cream cheese into tart cases followed by cooled strawberry coulis. Add fresh strawberries on top and brush apricot glaze. Chill before serving.
