Red Velvet Parfait

This recipe adds a healthy twist to the much-loved red velvet cake by layering yogurt, chia seeds and crunchy muesli


Remember the Cake Man Raven red velvet which I made with the hole in the middle? I was wondering what to do with the cake crumbs for awhile and I finally made a parfait out of it. This is something you have to make if you're on a diet and want to have dessert. I know diet and dessert shouldn't exist together but if it's any comfort to you, at least you're not gorging a whole piece of red velvet cake. You may choose to share a slice of red velvet with a friend but why do that when you're getting a whole lot more and less calories in this healthy and yummy parfait.


This parfait is so simple and you can make it for breakfast even on a workday morning. Just prepare the ingredients the night before and assemble the parfait the next morning. 



I was lucky to find this imported yogurt on quick sale while shopping. This thick and creamy yogurt is a great substitute for whipped cream normally used in parfait.


Ingredients:-
(makes 2 parfaits)

1 pot low-fat vanilla yogurt
2 tbsp chia seeds
some milk
some crunchy muesli cereal with mixed nuts (Try Yogood Strawberry Crunchy Muesli. It's delicious!)
some red velvet cake crumbs

Method:-
Soak the chia seeds in milk until gelled up. Mix the chia seed and yogurt and leave in fridge to soak overnight.

In a glass, add the red velvet cake crumbs at the bottom followed by a layer of crunchy muesli cereal and a layer of yogurt mixture. Repeat. The top layer should be the yogurt mixture. 

Serve chilled.

I wanted to top the parfait with some berries and crushed almonds but I didn't have the time to buy any. You could garnish with berries and chopped nuts. It would look nicer as a dessert with some topping.
