Strawberry White Chocolate Cupcakes - All-time favourite

A strawberry dream of strawberry pieces, strawberry jam and decadent white chocolate swirled in yellow cake and topped with white chocolate icing and a fresh strawberry

This is the second time I'm trying out a recipe from Beautiful Cupcakes by Kevin Chai. If you're a lover of cupcakes, this is a book you ought to have. Apart from brimming with gorgeous pictures, you can tell that quite a lot of thought have been put into the book as the decorations really complements the flavour of the cupcakes. I like admiring the beautiful pictures and studying the process to see if the recipe works or not.


For me, nothing beats strawberry and white chocolate. My weakness during uni years was Sainsbury's raspberry and white chocolate giant soft cookies. Just had to get them each time I pick up some groceries. Be it raspberries or strawberries, I love the white chocolate combo with either of the red berries.


Ingredients:-
220g butter
180 sugar
2 tbsp strawberry jam
1 tsp baking powder
4 eggs
60 g strawberries, chopped
150g white chocolate

For icing 
200g butter
100g icing sugar
200g white chocolate, melted
pink food colouring
marshmallows

Method:-
Preheat oven to 175°c, place greaseproof paper cases on a baking tray.

Combine, butter, sugar, strawberry jam, flour, baking powder and eggs in a mixer and beat until smooth and pale..

Stir in chopped strawberries and white chocolate, mix well.

Spoon the mixture into cases. Bake for 20 minutes. Remove the cakes from oven and cool on rack.

Prepare the topping by beating butter and icing sugar until light and smooth. Stir in chocolate and colouring. Pipe icing on to each cupcake and decorate with marshmallows.

These are absolutely delicious! I didn't use the marshmallows for the topping because it would be too sweet. I substituted the marshmallows with fresh strawberries instead. You'll notice that I didn't use any colouring on the icing as well. Keeping it natural.


I was luckily to get some feedback from my bff who made a impromptu visit. She absolutely love this cupcake especially the strawberry bits in the cake. Everything was perfect except she would prefer it with cream cheese frosting. Glad she loves the cupcake.
